Tangy Tomato Thokku

Ingredients

  • 1 kg ripe tomatoes, finely chopped
  • 1/4 cup sesame oil
  • 1 tsp mustard seeds
  • 1/2 tsp fenugreek seeds
  • 10-12 dry red chilies
  • 1/2 tsp asafoetida (hing)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1/4 cup jaggery, grated

Instructions

  1. Heat sesame oil in a pan and add mustard seeds. Once they splutter, add fenugreek seeds, dry red chilies, and asafoetida.
  2. Add the finely chopped tomatoes, turmeric powder, and salt. Cook on medium heat until the tomatoes turn mushy.
  3. Add grated jaggery and continue to cook until the thokku thickens and the oil separates from the mixture.
  4. Allow it to cool and store in an airtight container.
