Ingredients

  • 1 block of firm tofu, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp honey
  • 1 tsp sesame oil
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • Wooden skewers, soaked in water

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic to make the marinade.
  2. Thread the tofu, bell peppers, onion, and zucchini onto the soaked skewers.
  3. Place the skewers in a shallow dish and pour the marinade over them. Let them marinate for 15 minutes.
  4. Heat a stovetop grill pan over medium heat. Cook the skewers for 10-12 minutes, turning occasionally, until the tofu and vegetables are charred and tender.
