Taoist Tofu Pad Thai (道教豆腐泰式炒面)

Ingredients

  • 8 oz rice noodles
  • 1 block firm tofu, drained and cubed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 red bell pepper, thinly sliced
  • 2 cups bean sprouts
  • 3 green onions, chopped
  • 1/4 cup chopped peanuts
  • 2 eggs, lightly beaten
  • 1/4 cup soy sauce
  • 3 tablespoons tamarind paste
  • 2 tablespoons brown sugar
  • 1 teaspoon chili flakes

Instructions

  1. Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
  2. Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the tofu and stir-fry until golden. Remove the tofu from the wok and set aside.
  3. Heat the remaining oil in the wok. Add the garlic, bell pepper, bean sprouts, and green onions. Stir-fry for 2-3 minutes.
  4. Push the vegetables to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set.
  5. Add the soaked rice noodles, cooked tofu, and chopped peanuts to the wok.
  6. In a small bowl, mix together the soy sauce, tamarind paste, brown sugar, and chili flakes. Pour the sauce over the noodles and toss everything together until well combined.
  7. Divide the Pad Thai among serving plates and garnish with extra peanuts and lime wedges if desired.
