Ingredients
- 8 oz rice noodles
- 1 block firm tofu, drained and cubed
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 red bell pepper, thinly sliced
- 2 cups bean sprouts
- 3 green onions, chopped
- 1/4 cup chopped peanuts
- 2 eggs, lightly beaten
- 1/4 cup soy sauce
- 3 tablespoons tamarind paste
- 2 tablespoons brown sugar
- 1 teaspoon chili flakes
Instructions
- Soak the rice noodles in hot water for 10 minutes, then drain and set aside.
- Heat 1 tablespoon of oil in a large wok or skillet over medium-high heat. Add the tofu and stir-fry until golden. Remove the tofu from the wok and set aside.
- Heat the remaining oil in the wok. Add the garlic, bell pepper, bean sprouts, and green onions. Stir-fry for 2-3 minutes.
- Push the vegetables to one side of the wok and pour the beaten eggs into the empty space. Scramble the eggs until set.
- Add the soaked rice noodles, cooked tofu, and chopped peanuts to the wok.
- In a small bowl, mix together the soy sauce, tamarind paste, brown sugar, and chili flakes. Pour the sauce over the noodles and toss everything together until well combined.
- Divide the Pad Thai among serving plates and garnish with extra peanuts and lime wedges if desired.
