Tapioca Pearl Pilaf (sabudana Khichdi)
Tapioca Pearl Pilaf, also known as Sabudana Khichdi, is a popular dish in Jain Cuisine. It is a flavorful and nutritious recipe made with tapioca pearls, peanuts, and spices, and it is often enjoyed during fasting periods.
Ingredients
- 2 cups tapioca pearls
- 1 cup roasted peanuts
- 2-3 green chilies, finely chopped
- 1 medium-sized potato, boiled and chopped
- 1 tsp cumin seeds
- 1/2 tsp sugar
- 2 tbsp ghee (clarified butter)
- Salt to taste
- Fresh coriander leaves for garnish
Instructions
- Wash the tapioca pearls and soak them in water for 4-5 hours or overnight.
- Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped green chilies and sauté for a minute.
- Add the boiled potato and roasted peanuts to the pan. Mix well and cook for 2-3 minutes.
- Drain the soaked tapioca pearls and add them to the pan. Mix gently and cook for 5-7 minutes, stirring occasionally.
- Add salt and sugar, mix well, and cook for another 2-3 minutes until the pearls turn translucent.
- Garnish with fresh coriander leaves and serve hot.
