Tapioca Pearl Pilaf (sabudana Khichdi)

Ingredients

  • 2 cups tapioca pearls
  • 1 cup roasted peanuts
  • 2-3 green chilies, finely chopped
  • 1 medium-sized potato, boiled and chopped
  • 1 tsp cumin seeds
  • 1/2 tsp sugar
  • 2 tbsp ghee (clarified butter)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions

  1. Wash the tapioca pearls and soak them in water for 4-5 hours or overnight.
  2. Heat ghee in a pan and add cumin seeds. Once they splutter, add the chopped green chilies and sauté for a minute.
  3. Add the boiled potato and roasted peanuts to the pan. Mix well and cook for 2-3 minutes.
  4. Drain the soaked tapioca pearls and add them to the pan. Mix gently and cook for 5-7 minutes, stirring occasionally.
  5. Add salt and sugar, mix well, and cook for another 2-3 minutes until the pearls turn translucent.
  6. Garnish with fresh coriander leaves and serve hot.
