Tapioca Pilaf (spicy Sabudana Khichdi)

Ingredients

  • 2 cups tapioca pearls
  • 1 cup roasted peanuts
  • 2 medium potatoes, diced
  • 3-4 green chilies, chopped
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 cup fresh cilantro, chopped
  • Salt to taste
  • 3 tablespoons vegetable oil

Instructions

  1. Wash the tapioca pearls and soak them in water for 4-5 hours or overnight.
  2. Heat oil in a pan and add cumin seeds. Once they splutter, add the diced potatoes and cook until they are slightly golden.
  3. Add the soaked tapioca pearls, chopped green chilies, turmeric powder, and salt. Mix well and cook for 5-7 minutes.
  4. Add the roasted peanuts and cook for another 2-3 minutes.
  5. Garnish with fresh cilantro and serve hot.
