Tara Canyon Trout En Papillote

Ingredients

  • 4 whole trout, cleaned and gutted
  • 1 lemon, thinly sliced
  • 4 sprigs of fresh thyme
  • 4 sprigs of fresh rosemary
  • 1 red onion, thinly sliced
  • 4 cloves of garlic, minced
  • 8 cherry tomatoes, halved
  • 4 tablespoons of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place each trout on a large piece of parchment paper.
  3. Season the inside and outside of the trout with salt and pepper.
  4. Stuff each trout with lemon slices, thyme, rosemary, red onion, garlic, and cherry tomatoes.
  5. Drizzle each trout with olive oil.
  6. Wrap the parchment paper around the trout to create a sealed parcel.
  7. Place the parcels on a baking sheet and bake for 15 minutes.
  8. Carefully open the parcels and serve the trout hot.
