Tarkari Daal (lentil And Vegetable Curry)
Tarkari Daal is a traditional Pashtun dish that combines the heartiness of lentils with the flavors of mixed vegetables, creating a delicious and nutritious curry. This recipe is a staple in Pashtun cuisine and is perfect for a comforting meal.
Ingredients
- 1 cup lentils
- 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower)
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves garlic, minced
- 1-inch ginger, grated
- 1 tsp cumin seeds
- 1 tsp turmeric
- 1 tsp coriander powder
- 1/2 tsp red chili powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
- 4 cups water
Instructions
- Wash the lentils and soak them in water for 30 minutes.
- Heat oil in a pot and add cumin seeds. Once they splutter, add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
- Add diced tomatoes and cook until they turn soft.
- Stir in the turmeric, coriander powder, red chili powder, and salt. Cook for 2 minutes.
- Add the mixed vegetables and soaked lentils. Pour in 4 cups of water and bring to a boil.
- Reduce the heat, cover the pot, and simmer for 25-30 minutes or until the lentils and vegetables are tender.
- Sprinkle garam masala and simmer for another 5 minutes.
- Adjust the seasoning and consistency as per preference.
- Serve the Tarkari Daal hot with steamed rice or naan.
