Tarkari Daal (lentil And Vegetable Curry)

Ingredients

  • 1 cup lentils
  • 2 cups mixed vegetables (carrots, peas, potatoes, cauliflower)
  • 1 onion, chopped
  • 2 tomatoes, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 tsp cumin seeds
  • 1 tsp turmeric
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 2 tbsp oil
  • 4 cups water

Instructions

  1. Wash the lentils and soak them in water for 30 minutes.
  2. Heat oil in a pot and add cumin seeds. Once they splutter, add chopped onions, garlic, and ginger. Sauté until the onions are golden brown.
  3. Add diced tomatoes and cook until they turn soft.
  4. Stir in the turmeric, coriander powder, red chili powder, and salt. Cook for 2 minutes.
  5. Add the mixed vegetables and soaked lentils. Pour in 4 cups of water and bring to a boil.
  6. Reduce the heat, cover the pot, and simmer for 25-30 minutes or until the lentils and vegetables are tender.
  7. Sprinkle garam masala and simmer for another 5 minutes.
  8. Adjust the seasoning and consistency as per preference.
  9. Serve the Tarkari Daal hot with steamed rice or naan.
