Ingredients
- 1 cup red lentils, rinsed
- 2 tablespoons vegetable oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 2 cups mixed vegetables (such as carrots, potatoes, and peas), diced
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
- Stir in the ground turmeric, cumin, and coriander, and cook for 1-2 minutes until fragrant.
- Add the mixed vegetables and rinsed red lentils to the pot, and stir to combine with the spices and onions.
- Pour in the vegetable broth, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed, and serve the tarkari hot with rice or naan bread.
