Tarkari (lentil And Vegetable Curry)

Ingredients

  • 1 cup red lentils, rinsed
  • 2 tablespoons vegetable oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 2 cups mixed vegetables (such as carrots, potatoes, and peas), diced
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  2. Stir in the ground turmeric, cumin, and coriander, and cook for 1-2 minutes until fragrant.
  3. Add the mixed vegetables and rinsed red lentils to the pot, and stir to combine with the spices and onions.
  4. Pour in the vegetable broth, and season with salt and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
