Tarkari Qorma (lentil And Vegetable Stew)

Ingredients

  • 1 cup red lentils
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 cup chopped tomatoes
  • 3 cloves garlic, minced
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • 2 tbsp vegetable oil

Instructions

  1. Rinse the lentils and set aside.
  2. In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  3. Add the turmeric, cumin, and coriander to the pot, and stir for 1 minute to toast the spices.
  4. Add the lentils, potatoes, carrots, and tomatoes to the pot. Pour in the vegetable broth and season with salt and pepper.
  5. Bring the stew to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
  6. Adjust the seasoning if needed, and serve the Tarkari Qorma hot with naan or rice.
