Tarkari Qorma (lentil And Vegetable Stew)
Tarkari Qorma is a traditional Afghan stew that combines lentils and a variety of vegetables to create a hearty and flavorful dish. This vegetarian recipe is perfect for a comforting and nutritious meal.
Ingredients
- 1 cup red lentils
- 2 potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 1 cup chopped tomatoes
- 3 cloves garlic, minced
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp ground coriander
- 4 cups vegetable broth
- Salt and pepper to taste
- 2 tbsp vegetable oil
Instructions
- Rinse the lentils and set aside.
- In a large pot, heat the vegetable oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
- Add the turmeric, cumin, and coriander to the pot, and stir for 1 minute to toast the spices.
- Add the lentils, potatoes, carrots, and tomatoes to the pot. Pour in the vegetable broth and season with salt and pepper.
- Bring the stew to a boil, then reduce the heat to low and let it simmer for 30-35 minutes, or until the lentils and vegetables are tender.
- Adjust the seasoning if needed, and serve the Tarkari Qorma hot with naan or rice.
