Ingredients
- 1 cup taro, peeled and diced
- 1 can (14 oz) coconut milk
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Instructions
- In a pot, bring the diced taro and coconut milk to a boil. Reduce heat and simmer for 10 minutes, or until the taro is soft.
- Stir in the sugar, vanilla extract, and salt. Cook for an additional 5 minutes, stirring occasionally.
- Remove from heat and let the mixture cool to room temperature.

- Pour the mousse into serving cups and refrigerate for at least 2 hours before serving.
