Ingredients

  • 2 cups grated taro
  • 1 cup shredded coconut
  • 1 1/2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine the grated taro, shredded coconut, flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the coconut milk, vegetable oil, eggs, and vanilla extract.
