Taro and Spinach Stir-Fry (Kaukau na Spinach Stir-Frai)

Ingredients

  • 2 cups taro, peeled and diced
  • 2 cups fresh spinach leaves
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 red chili, sliced (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat the vegetable oil in a large pan or wok over medium heat.
  2. Add the onion, garlic, and red chili (if using) to the pan and sauté until the onion is translucent.
  3. Add the diced taro to the pan and stir-fry for 10-12 minutes, or until the taro is tender and slightly crispy.
