Taro Coconut Soup

Ingredients

  • 1 large taro root, peeled and diced
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red chili, sliced (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onion, garlic, ginger, and chili in some oil until fragrant.
  2. Add the diced taro and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the taro is tender.
  3. Stir in the coconut milk and simmer for an additional 5 minutes.
  4. Season with salt and pepper to taste.
  5. Remove from heat and let the soup cool slightly before serving.
