Taro Coconut Soup
Taro Coconut Soup is a traditional dish from Pitcairn Islands cuisine, known for its unique blend of flavors and creamy texture.
Ingredients
- 1 large taro root, peeled and diced
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 red chili, sliced (optional)
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onion, garlic, ginger, and chili in some oil until fragrant.
- Add the diced taro and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the taro is tender.
- Stir in the coconut milk and simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Remove from heat and let the soup cool slightly before serving.
