Ingredients
- 2 cups grated taro
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup water
- Oil for frying
- 1 ripe mango, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1 jalapeño, seeded and minced
- 2 tablespoons lime juice
- Salt to taste
Instructions
- In a large bowl, combine the grated taro, flour, baking powder, salt, and black pepper.
- Add water gradually and mix until a thick batter forms.
- Heat oil in a frying pan over medium heat.
- Drop spoonfuls of the taro batter into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel to drain excess oil.
- In a separate bowl, combine the diced mango, red onion, cilantro, jalapeño, lime juice, and salt to make the spicy mango chutney.
- Serve the taro fritters with the spicy mango chutney on the side.
