Taro Fritters With Spicy Mango Chutney

Ingredients

  • 2 cups grated taro
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • Oil for frying
  • 1 ripe mango, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1 jalapeño, seeded and minced
  • 2 tablespoons lime juice
  • Salt to taste

Instructions

  1. In a large bowl, combine the grated taro, flour, baking powder, salt, and black pepper.
  2. Add water gradually and mix until a thick batter forms.
  3. Heat oil in a frying pan over medium heat.
  4. Drop spoonfuls of the taro batter into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  5. Remove the fritters from the oil and place them on a paper towel to drain excess oil.
  6. In a separate bowl, combine the diced mango, red onion, cilantro, jalapeño, lime juice, and salt to make the spicy mango chutney.
  7. Serve the taro fritters with the spicy mango chutney on the side.
