Taro Leaf Wraps

Ingredients

  • 8 large taro leaves
  • 1 cup cooked quinoa
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled feta cheese
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Blanch the taro leaves in boiling water for 2 minutes. Remove and pat dry.
  2. In a bowl, mix the quinoa, tomatoes, red onion, cilantro, feta cheese, cumin, salt, and pepper.
  3. Place a spoonful of the quinoa mixture onto each taro leaf. Wrap the leaf around the filling, folding the sides in as you go.
  4. Secure the wraps with toothpicks if needed.
  5. Heat a non-stick pan over medium heat and lightly oil the surface.
  6. Carefully place the wraps in the pan and cook for 3-4 minutes on each side, until the taro leaves are tender and slightly crispy.
  7. Remove from the pan and serve warm.
