Ingredients

  • 4 large taro roots, peeled and sliced into thin rounds
  • 1 cup coconut milk
  • 1 lime, juiced and zested
  • 1/2 small cabbage, shredded
  • 1 carrot, grated
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 8 small tortillas

Instructions

  1. In a large bowl, combine the coconut milk, lime juice, and lime zest. Add the shredded cabbage, grated carrot, cilantro, and green onions. Toss to coat the slaw and season with salt and pepper. Set aside.
