Ingredients
- 4 large taro roots, peeled and sliced into thin rounds
- 1 cup coconut milk
- 1 lime, juiced and zested
- 1/2 small cabbage, shredded

- 1/4 cup chopped green onions
- 8 small tortillas
- Salt and pepper to taste
Instructions
- In a large bowl, combine the coconut milk, lime juice, and lime zest. Add the shredded cabbage, grated carrot, cilantro, and green onions. Toss to coat the slaw and season with salt and pepper. Set aside.
- In a large skillet, heat some oil over medium heat. Add the taro rounds and cook until golden brown and crispy, about 3-4 minutes per side. Remove from the skillet and place on a paper towel-lined plate to drain excess oil.
- Warm the tortillas in a dry skillet or over an open flame until soft and pliable.
- Assemble the tacos by placing a few taro rounds on each tortilla, topping with the coconut lime slaw, and garnishing with additional cilantro and green onions if desired.
