Ingredients
- 1 1/2 cups almond flour
- 1/2 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 4 eggs
- 1/2 cup unsalted butter, melted
- 1/2 teaspoon almond extract
- 1/4 cup sliced almonds, for garnish
- 1 cup orange juice
- 1/2 cup granulated sugar
- 1/4 cup water
- 2 tablespoons orange blossom water
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, mix together the almond flour, sugar, baking powder, and salt.
- Beat in the eggs, melted butter, and almond extract until well combined.
- Pour the batter into the prepared cake pan and sprinkle the sliced almonds on top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is baking, prepare the orange blossom syrup. In a small saucepan, combine the orange juice, sugar, and water. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally.
- Remove the syrup from the heat and stir in the orange blossom water. Let it cool slightly.
- Once the cake is done, remove it from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
- Using a toothpick or skewer, poke holes all over the top of the cake. Pour the orange blossom syrup over the cake, allowing it to soak in.
- Serve the almond cake with a drizzle of the remaining syrup and enjoy!
