Ingredients
- 1 1/2 cups almond flour
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large eggs
- 3/4 cup granulated sugar
- 1/2 cup extra virgin olive oil
- 1/2 teaspoon almond extract
- 1/4 cup sliced almonds, for topping
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a bowl, whisk together the almond flour, all-purpose flour, baking powder, and salt.
- In a separate bowl, beat the eggs and sugar until pale and creamy.
- Gradually add the olive oil and almond extract to the egg mixture, beating until well combined.
- Gently fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into the prepared cake pan and sprinkle the sliced almonds on top.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Serve the almond and olive oil cake at room temperature.
