Tarta De Queso (spanish Cheesecake) With Citrus Compote

Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1/4 cup sour cream
- 1 tsp vanilla extract
- 2 cups mixed citrus fruits, peeled and segmented (such as oranges, grapefruits, and tangerines)
- 1/4 cup honey
- 1 tbsp fresh lemon juice
Instructions
- Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
- In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
- In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and vanilla extract. Pour the batter over the crust.
- Bake for 55-60 minutes, or until the center is almost set. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
- While the cheesecake is chilling, prepare the citrus compote. In a saucepan, combine the mixed citrus fruits, honey, and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the fruits are softened and the mixture has thickened slightly. Let it cool.
- Once the cheesecake is chilled and the compote is ready, spoon the citrus compote over the cheesecake before serving.
