Tarta De Queso (spanish Cheesecake) With Citrus Compote

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/4 cup sour cream
  • 1 tsp vanilla extract
  • 2 cups mixed citrus fruits, peeled and segmented (such as oranges, grapefruits, and tangerines)
  • 1/4 cup honey
  • 1 tbsp fresh lemon juice

Instructions

  1. Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. In a bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of the prepared pan.
  3. In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the sour cream and vanilla extract. Pour the batter over the crust.
  4. Bake for 55-60 minutes, or until the center is almost set. Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight.
  5. While the cheesecake is chilling, prepare the citrus compote. In a saucepan, combine the mixed citrus fruits, honey, and lemon juice. Cook over medium heat for 5-7 minutes, stirring occasionally, until the fruits are softened and the mixture has thickened slightly. Let it cool.
  6. Once the cheesecake is chilled and the compote is ready, spoon the citrus compote over the cheesecake before serving.
