St. James Almond Cake, also known as Tarta de Santiago, is a traditional dessert from the Extremadura region of Spain. This delicious cake is made with ground almonds, sugar, and eggs, and is often flavored with lemon zest and a hint of cinnamon. It's a perfect treat to enjoy with a cup of coffee or after a meal.
Ingredients
- 250g ground almonds
- 200g granulated sugar
- 4 eggs
- 1 tsp lemon zest
- 1/2 tsp ground cinnamon
- Powdered sugar, for dusting
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
- In a large bowl, beat the eggs and sugar together until pale and fluffy.
- Gently fold in the ground almonds, lemon zest, and cinnamon until well combined.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
- Dust the top of the cake with powdered sugar before serving.
