Ingredients

  • 250g ground almonds
  • 200g granulated sugar
  • 4 eggs
  • 1 tsp lemon zest
  • 1/2 tsp ground cinnamon
  • Powdered sugar, for dusting

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 9-inch cake pan with parchment paper.
  2. In a large bowl, beat the eggs and sugar together until pale and fluffy.
  3. Gently fold in the ground almonds, lemon zest, and cinnamon until well combined.
  4. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  5. Bake for 40 minutes, or until the cake is golden and a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
  7. Dust the top of the cake with powdered sugar before serving.
