Ingredients
- 1 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 8 ounces bittersweet chocolate, finely chopped
- 2 large eggs
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
Instructions
- In a food processor, combine the flour, cocoa powder, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and vanilla extract. Pulse until the dough comes together.
- Press the dough into a 9-inch tart pan. Chill in the refrigerator for 30 minutes.
- Preheat the oven to 350°F (175°C).
- Line the chilled tart shell with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the parchment and weights, then bake for an additional 5 minutes. Let the crust cool.
- In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 1 minute, then stir until smooth.
- In a separate bowl, whisk together the eggs, sugar, and salt. Gradually whisk in the chocolate mixture until smooth.
- Pour the chocolate filling into the cooled tart shell. Bake for 15-20 minutes, or until the filling is set around the edges but slightly jiggly in the center.
- Let the tart cool to room temperature, then refrigerate for at least 2 hours before serving.
