Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 8 ounces bittersweet chocolate, finely chopped
  • 2 large eggs
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt

Instructions

  1. In a food processor, combine the flour, cocoa powder, butter, sugar, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Add the egg yolk and vanilla extract. Pulse until the dough comes together.
  3. Press the dough into a 9-inch tart pan. Chill in the refrigerator for 30 minutes.
  4. Preheat the oven to 350°F (175°C).
  5. Line the chilled tart shell with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the parchment and weights, then bake for an additional 5 minutes. Let the crust cool.
  6. In a saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and add the chopped chocolate. Let it sit for 1 minute, then stir until smooth.
  7. In a separate bowl, whisk together the eggs, sugar, and salt. Gradually whisk in the chocolate mixture until smooth.
  8. Pour the chocolate filling into the cooled tart shell. Bake for 15-20 minutes, or until the filling is set around the edges but slightly jiggly in the center.
  9. Let the tart cool to room temperature, then refrigerate for at least 2 hours before serving.
