Ingredients

  • 1 1/2 cups all-purpose flour

  • 3-4 tablespoons ice water
  • 4 large leeks, white and light green parts only, thinly sliced
  • 2 tablespoons unsalted butter
  • 1 cup grated Gruyère cheese
  • 1 cup heavy cream
  • 3 large eggs
  • Salt and pepper to taste

Instructions

  1. In a food processor, combine the flour, cold cubed butter, and salt. Pulse until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together.
  3. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. Preheat the oven to 375°F (190°C).
  5. Roll out the dough on a floured surface and transfer it to a 9-inch tart pan. Press the dough into the pan and trim any excess.
  6. In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced leeks and cook until softened, about 8-10 minutes. Season with salt and pepper.
  7. Sprinkle half of the grated Gruyère cheese over the tart crust. Spread the cooked leeks on top of the cheese.
  8. In a bowl, whisk together the heavy cream and eggs. Season with salt and pepper. Pour the mixture over the leeks in the tart pan.
  9. Sprinkle the remaining Gruyère cheese on top.
  10. Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown.
  11. Allow the tart to cool for a few minutes before slicing and serving.
