Ingredients
- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, cold and cubed
- 1/4 teaspoon salt
- 3-4 tablespoons ice water
- 4 large leeks, white and light green parts only, thinly sliced
- 2 tablespoons unsalted butter
- 1 cup grated Gruyère cheese
- 1 cup heavy cream
- 3 large eggs
- Salt and pepper to taste
Instructions
- In a food processor, combine the flour, cold cubed butter, and salt. Pulse until the mixture resembles coarse crumbs.
- Gradually add the ice water, 1 tablespoon at a time, and pulse until the dough comes together.
- Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- Preheat the oven to 375°F (190°C).
- Roll out the dough on a floured surface and transfer it to a 9-inch tart pan. Press the dough into the pan and trim any excess.
- In a large skillet, melt 2 tablespoons of butter over medium heat. Add the sliced leeks and cook until softened, about 8-10 minutes. Season with salt and pepper.
- Sprinkle half of the grated Gruyère cheese over the tart crust. Spread the cooked leeks on top of the cheese.
- In a bowl, whisk together the heavy cream and eggs. Season with salt and pepper. Pour the mixture over the leeks in the tart pan.
- Sprinkle the remaining Gruyère cheese on top.
- Bake the tart in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown.
- Allow the tart to cool for a few minutes before slicing and serving.
