Tashreeb (assyrian Chicken And Rice Casserole)

Ingredients

  • 2 lbs chicken thighs, bone-in and skin-on
  • 2 cups basmati rice
  • 1 large onion, chopped
  • 4 garlic cloves, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 4 cups chicken broth
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs with salt, pepper, and half of the turmeric.
  2. In a large pot, heat some oil over medium-high heat and brown the chicken thighs on both sides. Remove the chicken and set aside.
  3. In the same pot, add the chopped onion and garlic. Cook until softened.
  4. Add the remaining turmeric, cumin, coriander, and cinnamon. Stir to combine.
  5. Add the rice and stir to coat with the spices.
  6. Place the browned chicken thighs on top of the rice mixture.
  7. Pour the chicken broth over the chicken and rice. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
  8. Sprinkle with chopped parsley before serving.
