Tashreeb (assyrian Chicken And Rice Casserole)
Tashreeb is a traditional Assyrian chicken and rice casserole that is packed with flavor and comforting aromas. This hearty dish is perfect for a cozy family dinner or a gathering with friends.
Ingredients
- 2 lbs chicken thighs, bone-in and skin-on
- 2 cups basmati rice
- 1 large onion, chopped
- 4 garlic cloves, minced
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cinnamon
- 4 cups chicken broth
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Season the chicken thighs with salt, pepper, and half of the turmeric.
- In a large pot, heat some oil over medium-high heat and brown the chicken thighs on both sides. Remove the chicken and set aside.
- In the same pot, add the chopped onion and garlic. Cook until softened.
- Add the remaining turmeric, cumin, coriander, and cinnamon. Stir to combine.
- Add the rice and stir to coat with the spices.
- Place the browned chicken thighs on top of the rice mixture.
- Pour the chicken broth over the chicken and rice. Bring to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the chicken is cooked through and the rice is tender.
- Sprinkle with chopped parsley before serving.
