Tashreeb (chicken And Potato Stew)

Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • 2 large potatoes, peeled and cubed
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 4 cups chicken broth
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. Season the chicken thighs with salt, pepper, turmeric, cumin, and paprika.
  2. In a large pot, heat the olive oil over medium heat. Add the seasoned chicken thighs and cook until golden brown on both sides. Remove the chicken from the pot and set aside.
  3. In the same pot, sauté the chopped onion and minced garlic until fragrant.
  4. Add the diced tomatoes and cook for a few minutes until they start to soften.
  5. Return the browned chicken thighs to the pot and add the cubed potatoes.
  6. Pour in the chicken broth, season with salt and pepper, and bring to a boil. Reduce the heat, cover, and simmer for about 45 minutes or until the chicken is cooked through and the potatoes are tender.
  7. Once done, remove the pot from the heat and let it sit for a few minutes before serving.
  8. Garnish with fresh cilantro and serve the Tashreeb hot.
