Tasmanian Tiger Tagliatelle

Ingredients

  • 250g Tasmanian beef, thinly sliced
  • 300g tagliatelle pasta
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 zucchini, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup beef broth
  • 1/4 cup heavy cream
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook the tagliatelle according to package instructions. Drain and set aside.
  2. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the beef and cook until browned. Remove from the skillet and set aside.
  3. Heat the remaining olive oil in the same skillet. Add the onion and garlic, and sauté until softened.
  4. Add the red bell pepper, zucchini, and cherry tomatoes to the skillet. Cook until the vegetables are tender.
  5. Pour in the beef broth and bring to a simmer. Stir in the heavy cream and return the beef to the skillet.
  6. Add the cooked tagliatelle to the skillet and toss to coat with the sauce. Season with salt and pepper to taste.
  7. Divide the Tasmanian Tiger Tagliatelle among serving plates and serve hot.
