Ingredients

  • 200g dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1/4 cup cocoa powder, for rolling

Instructions

  1. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  2. Place the chopped chocolate in a heatproof bowl. Pour the hot cream over the chocolate and let it sit for 1 minute to soften the chocolate.
  3. Add the butter and vanilla extract to the bowl. Gently stir the mixture until smooth and glossy.
  4. Cover the bowl with plastic wrap and refrigerate for 2 hours, or until the mixture is firm enough to scoop and roll into balls.
  5. Using a small spoon or melon baller, scoop out small portions of the chocolate mixture and roll them into 1-inch balls.
  6. Roll the truffles in cocoa powder to coat evenly.
  7. Place the coated truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes before serving.
