Tasty Ashlyamfu (Ашлямфу)
Ashlyamfu is a traditional Kyrgyz dish made from starch noodles, typically served as a cold appetizer or side dish. It's a refreshing and light dish, perfect for hot summer days.
Ingredients
- 2 cups cornstarch
- 6 cups water
- 1 tsp salt
- 1 clove garlic, minced
- 1/4 cup vegetable oil
- 1/4 cup white vinegar
- 1/2 tsp ground black pepper
- 1/4 cup chopped fresh dill
Instructions
- In a large pot, bring 6 cups of water to a boil.
- In a small bowl, mix the cornstarch with 1 cup of cold water until smooth.
- Slowly pour the cornstarch mixture into the boiling water, stirring constantly.
- Add salt and continue to cook, stirring constantly, until the mixture thickens and becomes translucent, about 5-7 minutes.
- Remove from heat and pour the mixture into a shallow dish to cool and set, about 30 minutes.
- Once set, cut the ashlyamfu into small cubes and place in a serving dish.
- In a separate bowl, mix together the minced garlic, vegetable oil, white vinegar, black pepper, and chopped dill.
- Pour the dressing over the ashlyamfu and toss gently to coat.
- Refrigerate for at least 1 hour before serving.
