Tasty Borscht with Fermented Cabbage (Борщ с квашеной капустой)
Borscht is a traditional soup in Kyrgyz cuisine, and this recipe adds a delicious twist with the addition of tangy fermented cabbage. This hearty and flavorful soup is perfect for a comforting meal, especially during the colder months.
Ingredients
- 1 pound beef, cubed
- 1 onion, chopped
- 3 medium beets, peeled and grated
- 2 carrots, grated
- 4 cups beef or vegetable broth
- 2 cups fermented cabbage
- 3 potatoes, peeled and cubed
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 bay leaves
- Salt and pepper to taste
- Sour cream and fresh dill for serving
Instructions
- In a large pot, brown the beef and onions over medium heat.
- Add the grated beets, carrots, and broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
- Add the fermented cabbage, potatoes, tomatoes, garlic, tomato paste, and bay leaves. Simmer for an additional 20 minutes, or until the vegetables are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
