Tasty Borscht with Fermented Cabbage (Борщ с квашеной капустой)

Ingredients

  • 1 pound beef, cubed
  • 1 onion, chopped
  • 3 medium beets, peeled and grated
  • 2 carrots, grated
  • 4 cups beef or vegetable broth
  • 2 cups fermented cabbage
  • 3 potatoes, peeled and cubed
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • Salt and pepper to taste
  • Sour cream and fresh dill for serving

Instructions

  1. In a large pot, brown the beef and onions over medium heat.
  2. Add the grated beets, carrots, and broth. Bring to a boil, then reduce heat and simmer for 30 minutes.
  3. Add the fermented cabbage, potatoes, tomatoes, garlic, tomato paste, and bay leaves. Simmer for an additional 20 minutes, or until the vegetables are tender.
  4. Season with salt and pepper to taste.
  5. Serve hot, garnished with a dollop of sour cream and a sprinkle of fresh dill.
