Ingredients
- 1 kg beef, cut into cubes
- 2 onions, finely chopped
- 3 tomatoes, chopped
- 2 bell peppers, sliced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cayenne pepper
- 1 tsp paprika
- 1/2 cup vegetable oil
- Salt and pepper to taste
Instructions
- Season the beef with salt, pepper, cayenne pepper, and paprika.
- Heat the vegetable oil in a large pot over medium heat.
- Add the seasoned beef and cook until browned on all sides.
- Remove the beef from the pot and set aside.
- In the same pot, add the onions, garlic, and ginger. Sauté until fragrant.
- Add the tomatoes and bell peppers, and cook until softened.
- Return the beef to the pot and stir to combine with the vegetables.
- Cover the pot and let the Tsofi simmer for 45 minutes, stirring occasionally.
- Adjust seasoning with salt and pepper, if needed.
- Serve the Tsofi hot with rice or fufu.
