Ingredients

  • 1 kg beef, cut into cubes
  • 2 onions, finely chopped
  • 3 tomatoes, chopped
  • 2 bell peppers, sliced
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tsp cayenne pepper
  • 1 tsp paprika
  • 1/2 cup vegetable oil
  • Salt and pepper to taste

Instructions

  1. Season the beef with salt, pepper, cayenne pepper, and paprika.
  2. Heat the vegetable oil in a large pot over medium heat.
  3. Add the seasoned beef and cook until browned on all sides.
  4. Remove the beef from the pot and set aside.
  5. In the same pot, add the onions, garlic, and ginger. Sauté until fragrant.
  6. Add the tomatoes and bell peppers, and cook until softened.
  7. Return the beef to the pot and stir to combine with the vegetables.
  8. Cover the pot and let the Tsofi simmer for 45 minutes, stirring occasionally.
  9. Adjust seasoning with salt and pepper, if needed.
  10. Serve the Tsofi hot with rice or fufu.
