Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup dried apricots
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Season the chicken breasts with salt and pepper, then place them in the skillet and cook until browned on both sides, about 5 minutes per side. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic, ground cumin, coriander, cinnamon, and cayenne pepper, and cook for an additional 2 minutes.
  4. Add the dried apricots and chicken broth to the skillet, then return the chicken breasts to the skillet, nestling them among the apricots.
  5. Cover the skillet and simmer for 30-40 minutes, or until the chicken is cooked through and the apricots are tender.
  6. Serve the Golden Apricot Chicken hot, garnished with fresh cilantro or parsley if desired.
