Ingredients

  • 2 cups basmati rice
  • 1 lb chicken thighs, cut into bite-sized pieces
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 4 cups chicken broth
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. Add the chicken pieces to the pot and cook until browned on all sides.
  3. Stir in the diced carrots, ground cumin, coriander, and turmeric. Cook for a few minutes to allow the spices to become fragrant.
  4. Add the basmati rice to the pot and stir to coat it with the spices and chicken mixture.
  5. Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
  6. Fluff the pilav with a fork and let it rest for a few minutes before serving.
