Tavuklu Pilav (fragrant Chicken And Rice Casserole)
Tavuklu Pilav, also known as Fragrant Chicken and Rice Casserole, is a traditional dish from Kurdish cuisine that is loved for its aromatic flavors and comforting texture.
Ingredients
- 2 cups basmati rice
- 1 lb chicken thighs, cut into bite-sized pieces
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 tablespoons olive oil
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon turmeric
- 4 cups chicken broth
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
- Add the chicken pieces to the pot and cook until browned on all sides.
- Stir in the diced carrots, ground cumin, coriander, and turmeric. Cook for a few minutes to allow the spices to become fragrant.
- Add the basmati rice to the pot and stir to coat it with the spices and chicken mixture.
- Pour in the chicken broth and season with salt and pepper. Bring to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the liquid is absorbed.
- Fluff the pilav with a fork and let it rest for a few minutes before serving.
