Ingredients
- 1 1/2 cups basmati rice
- 1 lb chicken breast, cut into cubes
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1/2 cup mixed nuts (almonds, pistachios, and pine nuts)
- 1/2 cup mixed dried fruits (raisins, apricots, and cranberries)
- 2 tablespoons olive oil
- 2 1/2 cups chicken broth
- 1 teaspoon ground cumin
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground turmeric
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the minced garlic and cubed chicken to the pot. Cook until the chicken is no longer pink.
- Stir in the rice, cumin, cinnamon, turmeric, salt, and pepper. Cook for 2-3 minutes, stirring constantly.
- Pour in the chicken broth and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes.
- After 15 minutes, gently stir in the mixed nuts and dried fruits. Cover the pot again and continue to cook for an additional 5 minutes.
- Remove the pot from the heat and let it sit, covered, for 5 minutes to allow the flavors to meld.
- Fluff the pilaf with a fork before serving.
