Tawau Seafood Noodle Soup

Ingredients

  • 500g fresh seafood (prawns, fish, squid)
  • 300g egg noodles
  • 1 liter seafood or chicken broth
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, sliced
  • 2 stalks lemongrass, smashed
  • 1 red chili, sliced
  • 1 tomato, cut into wedges
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a pot, heat some oil and sauté the garlic, ginger, lemongrass, and chili until fragrant.
  2. Add the seafood and cook until they start to turn opaque.
  3. Pour in the broth, soy sauce, fish sauce, and sugar. Bring to a boil.
  4. Add the tomato and simmer for 10 minutes.
  5. Cook the egg noodles according to package instructions.
  6. Divide the noodles into serving bowls and ladle the seafood soup over the noodles.
