Tchaka (haitian Creole Chicken Stew)
Tchaka is a traditional Haitian Creole chicken stew that is bursting with flavor and spices. This hearty and comforting dish is perfect for a cozy family dinner or for entertaining guests.
Ingredients
- 4 chicken thighs
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 2 tomatoes, chopped
- 1 cup pumpkin, diced
- 1 cup water
- 1 cup coconut milk
- 2 tablespoons tomato paste
- 1 scotch bonnet pepper, whole
- 1 teaspoon thyme
- 1 teaspoon parsley
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- In a large pot, brown the chicken thighs over medium heat for 5 minutes.
- Add the onion, garlic, and bell pepper to the pot and sauté for another 5 minutes.
- Stir in the tomatoes, pumpkin, water, coconut milk, tomato paste, scotch bonnet pepper, thyme, parsley, paprika, salt, and pepper.
- Cover the pot and simmer for 45 minutes, or until the chicken is cooked through and the stew has thickened.
- Remove the scotch bonnet pepper before serving.
