Ingredients

  • 4 chicken thighs
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 tomatoes, chopped
  • 1 cup pumpkin, diced
  • 1 cup water
  • 1 cup coconut milk
  • 2 tablespoons tomato paste
  • 1 scotch bonnet pepper, whole
  • 1 teaspoon thyme
  • 1 teaspoon parsley
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the chicken thighs over medium heat for 5 minutes.
  2. Add the onion, garlic, and bell pepper to the pot and sauté for another 5 minutes.
  3. Stir in the tomatoes, pumpkin, water, coconut milk, tomato paste, scotch bonnet pepper, thyme, parsley, paprika, salt, and pepper.
  4. Cover the pot and simmer for 45 minutes, or until the chicken is cooked through and the stew has thickened.
  5. Remove the scotch bonnet pepper before serving.
