Ingredients
- 1 cup quinoa
- 1/2 cup teff
- 1 red onion, finely chopped
- 1 tomato, diced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika

Instructions
- Rinse the quinoa and teff under cold water.

- In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Refrigerate for at least 30 minutes before serving.
