Teff Salad (ethiopian Spiced Quinoa Salad)

Ingredients

  • 1 cup quinoa
  • 1/2 cup teff
  • 1 red onion, finely chopped
  • 1 tomato, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa and teff under cold water.
  2. In a pot, bring 2 cups of water to a boil and add the quinoa and teff. Reduce heat, cover, and simmer for 15 minutes.
  3. Fluff the quinoa and teff with a fork and let it cool.
  4. In a large bowl, combine the cooked quinoa and teff with the chopped onion, diced tomato, and parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, cumin, paprika, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Refrigerate for at least 30 minutes before serving.
