Tempeh And Peanut Noodle Stir-fry

Ingredients

  • 8 oz tempeh, cubed
  • 8 oz rice noodles
  • 1/4 cup peanut butter
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp maple syrup
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/4 cup chopped peanuts, for garnish

Instructions

  1. In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
  2. In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, and garlic to make the peanut sauce.
  3. In a large skillet, heat some oil over medium heat. Add the tempeh and cook until golden brown, about 5 minutes.
