Ingredients
- 8 oz tempeh, cubed
- 8 oz rice noodles
- 1/4 cup peanut butter
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tbsp maple syrup
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 cup broccoli florets
- 1/4 cup chopped peanuts, for garnish
Instructions
- In a large pot, cook the rice noodles according to the package instructions. Drain and set aside.
- In a small bowl, whisk together the peanut butter, soy sauce, rice vinegar, sesame oil, maple syrup, and garlic to make the peanut sauce.
