Tempered Rice (fragrant Hyderabadi Bagara Khana)

Ingredients

  • 2 cups Basmati rice
  • 4 cups water
  • 1/4 cup ghee
  • 1 onion, thinly sliced
  • 4 cloves
  • 4 green cardamom pods
  • 1 cinnamon stick
  • 1 teaspoon cumin seeds
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the Basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice. Cook for 8-10 minutes or until the rice is 70% cooked. Drain and set aside.
  3. In a separate pan, heat ghee over medium heat. Add the sliced onion and sauté until golden brown.
  4. Add the cloves, green cardamom pods, cinnamon stick, and cumin seeds to the pan. Sauté for a minute until fragrant.
  5. Stir in the ginger-garlic paste, turmeric powder, and salt. Cook for another minute.
  6. Add the partially cooked rice to the pan and gently mix with the spices. Cover and cook on low heat for 10-12 minutes until the rice is fully cooked and aromatic.
  7. Garnish with fresh cilantro and serve hot.
