Ingredients
- 8 spring roll wrappers

- 1/2 cup ice-cold water

Instructions
- Prepare the filling by combining the shredded cabbage, julienned carrot, and bean sprouts in a bowl.
- Place a spring roll wrapper on a clean surface and add a portion of the filling mixture onto the bottom third of the wrapper.
- Place a shrimp on top of the filling, then fold the sides of the wrapper over the filling and roll tightly to enclose the ingredients.
- In a separate bowl, mix the all-purpose flour, cornstarch, and ice-cold water to create a tempura batter.
- Heat oil in a deep pan or wok over medium-high heat.
- Dip each spring roll into the tempura batter, allowing any excess to drip off, then carefully place it into the hot oil.
- Fry the spring rolls in batches until they are golden and crispy, about 3-4 minutes per batch.
- Remove the spring rolls from the oil and drain on a paper towel-lined plate.
- Serve the tempura chūnjuǎn with your favorite dipping sauce and enjoy!
