Ingredients

  • 8 spring roll wrappers

  • 1/4 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1/2 cup ice-cold water

Instructions

  1. Prepare the filling by combining the shredded cabbage, julienned carrot, and bean sprouts in a bowl.
  2. Place a spring roll wrapper on a clean surface and add a portion of the filling mixture onto the bottom third of the wrapper.
  3. Place a shrimp on top of the filling, then fold the sides of the wrapper over the filling and roll tightly to enclose the ingredients.
  4. In a separate bowl, mix the all-purpose flour, cornstarch, and ice-cold water to create a tempura batter.
  5. Heat oil in a deep pan or wok over medium-high heat.
  6. Dip each spring roll into the tempura batter, allowing any excess to drip off, then carefully place it into the hot oil.
  7. Fry the spring rolls in batches until they are golden and crispy, about 3-4 minutes per batch.
  8. Remove the spring rolls from the oil and drain on a paper towel-lined plate.
  9. Serve the tempura chūnjuǎn with your favorite dipping sauce and enjoy!
