Tenby Tandoori Chicken

Ingredients

  • 4 chicken breasts, skinless
  • 1 cup plain yogurt
  • 2 tablespoons tandoori masala spice mix
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1 tablespoon vegetable oil
  • 1 onion, sliced
  • 1 bell pepper, sliced

Instructions

  1. In a bowl, mix the yogurt, tandoori masala, ginger-garlic paste, cumin, coriander, turmeric, lemon juice, and salt.
  2. Cut slits into the chicken breasts and coat them with the yogurt marinade. Marinate for at least 2 hours, or overnight for best results.
  3. Heat the vegetable oil in a pan and sauté the sliced onion and bell pepper until they are slightly caramelized. Remove from the pan and set aside.
  4. In the same pan, cook the marinated chicken breasts over medium heat for 6-7 minutes on each side, or until fully cooked.
  5. Serve the Tandoori Chicken hot, garnished with the sautéed onions and bell peppers.
