Tenby Tiramisu

Ingredients

  • 250g mascarpone cheese
  • 100g caster sugar
  • 2 large eggs, separated
  • 150ml strong coffee, cooled
  • 6 Tbsp Welsh cream liqueur
  • 200g ladyfinger biscuits
  • 1 Tbsp cocoa powder

Instructions

  1. In a bowl, whisk together the mascarpone cheese and caster sugar until smooth.
  2. Add the egg yolks to the mixture and beat until well combined.
  3. In a separate bowl, whisk the egg whites until stiff peaks form.
  4. Gently fold the egg whites into the mascarpone mixture until fully incorporated.
  5. In a shallow dish, mix the coffee and Welsh cream liqueur.
  6. Dip each ladyfinger biscuit into the coffee mixture, ensuring they are well soaked but not falling apart.
  7. Arrange a layer of soaked biscuits in the bottom of a serving dish.
  8. Spoon half of the mascarpone mixture over the biscuits and smooth it out.
  9. Repeat with another layer of soaked biscuits and the remaining mascarpone mixture.
  10. Cover and refrigerate for at least 4 hours, or overnight, to set.
  11. Before serving, dust the top of the tiramisu with cocoa powder.
