Tenby Tiramisu
Indulge in the flavors of Pembrokeshire with this delightful Tenby Tiramisu recipe. This traditional Italian dessert gets a local twist with the addition of Welsh ingredients, creating a unique and delicious treat.
Ingredients
- 250g mascarpone cheese
- 100g caster sugar
- 2 large eggs, separated
- 150ml strong coffee, cooled
- 6 Tbsp Welsh cream liqueur
- 200g ladyfinger biscuits
- 1 Tbsp cocoa powder
Instructions
- In a bowl, whisk together the mascarpone cheese and caster sugar until smooth.
- Add the egg yolks to the mixture and beat until well combined.
- In a separate bowl, whisk the egg whites until stiff peaks form.
- Gently fold the egg whites into the mascarpone mixture until fully incorporated.
- In a shallow dish, mix the coffee and Welsh cream liqueur.
- Dip each ladyfinger biscuit into the coffee mixture, ensuring they are well soaked but not falling apart.
- Arrange a layer of soaked biscuits in the bottom of a serving dish.
- Spoon half of the mascarpone mixture over the biscuits and smooth it out.
- Repeat with another layer of soaked biscuits and the remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours, or overnight, to set.
- Before serving, dust the top of the tiramisu with cocoa powder.
