Tender Beef Stew (Etli Güveç)

Ingredients

  • 1.5 lbs (700g) beef stew meat, cubed
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 carrots, sliced
  • 2 potatoes, cubed
  • 1 red bell pepper, chopped
  • 2 tomatoes, diced
  • 2 tbsp tomato paste
  • 1/2 cup water
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp dried thyme

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and garlic, and sauté until softened.
  3. Add the beef stew meat to the pot and brown on all sides.
  4. Stir in the tomato paste, paprika, cumin, and thyme, coating the meat evenly.
  5. Add the carrots, potatoes, bell pepper, and tomatoes to the pot.
  6. Pour in the water, season with salt and pepper, and stir to combine.
  7. Cover the pot and simmer for 2 hours, or until the meat is tender.
  8. Adjust seasoning if needed and serve hot.
