Tender Chicken In A Zesty Lemon Sauce (lake Malawi Lemon Chicken)
This Lake Malawi Lemon Chicken recipe is a delightful combination of tender chicken in a zesty lemon sauce, a popular dish in Malawian cuisine.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 2 tablespoons water
- Lemon slices and fresh parsley for garnish
Instructions
- In a shallow dish, mix the flour, salt, and black pepper. Dredge the chicken breasts in the flour mixture, shaking off any excess.
- In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the chicken broth, lemon juice, honey, and minced garlic. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the skillet and cook until the sauce thickens, about 2-3 minutes.
- Return the chicken to the skillet, turning to coat in the lemon sauce. Simmer for an additional 2-3 minutes to heat the chicken through.
- Remove the skillet from the heat and garnish the chicken with lemon slices and fresh parsley.
- Serve the tender chicken in the zesty lemon sauce hot, accompanied by your favorite side dishes.
