Tender Lamb Stew (Kuzu Güveç)

Ingredients

  • 1.5 lbs (700g) lamb shoulder, cut into chunks
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 2 tomatoes, diced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1/4 cup (60ml) olive oil
  • 1/2 cup (120ml) water
  • Salt and pepper to taste
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp dried oregano
  • 1/2 tsp dried thyme

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and cook until softened.
  2. Add the lamb chunks to the pot and brown on all sides.
  3. Stir in the tomatoes, bell peppers, water, and seasonings. Cover and simmer for 2 hours, stirring occasionally.
  4. Adjust the seasoning with salt and pepper, if needed.
  5. Serve the Kuzu Güveç hot, accompanied by crusty bread or over a bed of rice.
