Ingredients
- 1 lb lamb, cubed
- 2 tbsp olive oil

- 1/4 tsp cayenne pepper
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth

Instructions
- Heat olive oil in a large pot over medium heat. Add the lamb and cook until browned on all sides. Remove the lamb from the pot and set aside.
- In the same pot, add the chopped onion and garlic. Cook until softened.
- Stir in the ground cumin, coriander, cinnamon, and cayenne pepper. Cook for 1-2 minutes until fragrant.
- Return the browned lamb to the pot. Add the diced tomatoes and chicken broth. Season with salt and pepper. Bring to a simmer, then reduce heat and cover. Cook for 30 minutes, stirring occasionally.
- While the lamb is cooking, prepare the couscous according to package instructions.
- Serve the lamb stew over the cooked couscous, garnished with chopped cilantro.
