Ingredients

  • 4 large eggs
  • 1 cup fresh oysters
  • 1/2 cup tapioca starch
  • 1/4 cup water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 stalks scallions, chopped
  • 1/4 cup lard or cooking oil

Instructions

  1. In a bowl, whisk together eggs, tapioca starch, water, salt, and white pepper until smooth.
  2. Add the fresh oysters and chopped scallions to the egg mixture, and stir to combine.
  3. Heat lard or cooking oil in a non-stick pan over medium heat.
  4. Pour the oyster and egg mixture into the pan, spreading it out evenly to form a large omelette.
  5. Cook for 3-4 minutes until the bottom is golden and crispy.
  6. Flip the omelette and cook for another 3-4 minutes until the other side is golden and crispy.
  7. Transfer to a serving plate and serve hot.
