Ingredients
- 4 large eggs
- 1 cup fresh oysters
- 1/2 cup tapioca starch
- 1/4 cup water
- 1/2 teaspoon salt
- 1/4 teaspoon ground white pepper
- 2 stalks scallions, chopped
- 1/4 cup lard or cooking oil
Instructions
- In a bowl, whisk together eggs, tapioca starch, water, salt, and white pepper until smooth.
- Add the fresh oysters and chopped scallions to the egg mixture, and stir to combine.
- Heat lard or cooking oil in a non-stick pan over medium heat.
- Pour the oyster and egg mixture into the pan, spreading it out evenly to form a large omelette.
- Cook for 3-4 minutes until the bottom is golden and crispy.
- Flip the omelette and cook for another 3-4 minutes until the other side is golden and crispy.
- Transfer to a serving plate and serve hot.
