Ingredients

  • 1 whole pomfret fish, cleaned and scaled
  • 3 cloves garlic, thinly sliced
  • 1 inch ginger, julienned
  • 2 tomatoes, sliced
  • 2 stalks scallions, cut into 2-inch lengths
  • 3 tablespoons soy sauce
  • 2 tablespoons cooking oil
  • 1 tablespoon Shaoxing wine
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1/2 teaspoon white pepper
  • 1/4 teaspoon salt

Instructions

  1. Place the pomfret fish on a heatproof dish.
  2. Spread the garlic, ginger, and tomatoes on top of the fish.
  3. Steam the fish over high heat for 10 minutes.
  4. While the fish is steaming, heat the cooking oil in a small saucepan until hot.
  5. Remove the fish from the steamer and pour off any accumulated liquid.
  6. Top the fish with the scallions.
  7. In a small bowl, mix together the soy sauce, Shaoxing wine, sesame oil, sugar, white pepper, and salt.
  8. Heat the oil until it begins to smoke, then carefully pour it over the scallions and fish.
  9. Serve hot with steamed rice.
