Ingredients
- 1 whole pomfret fish, cleaned and scaled
- 3 cloves garlic, thinly sliced
- 1 inch ginger, julienned
- 2 tomatoes, sliced
- 2 stalks scallions, cut into 2-inch lengths
- 3 tablespoons soy sauce
- 2 tablespoons cooking oil
- 1 tablespoon Shaoxing wine
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon white pepper
- 1/4 teaspoon salt
Instructions
- Place the pomfret fish on a heatproof dish.
- Spread the garlic, ginger, and tomatoes on top of the fish.
- Steam the fish over high heat for 10 minutes.
- While the fish is steaming, heat the cooking oil in a small saucepan until hot.
- Remove the fish from the steamer and pour off any accumulated liquid.
- Top the fish with the scallions.
- In a small bowl, mix together the soy sauce, Shaoxing wine, sesame oil, sugar, white pepper, and salt.
- Heat the oil until it begins to smoke, then carefully pour it over the scallions and fish.
- Serve hot with steamed rice.
