Teochew Style Braised Duck Feet (潮州卤鸭脚)

Ingredients

  • 1 kg duck feet
  • 2 slices ginger
  • 2 cloves garlic, minced
  • 2 star anise
  • 2 dried chili peppers
  • 1 cinnamon stick
  • 1/4 cup soy sauce
  • 1/4 cup dark soy sauce
  • 1/4 cup Shaoxing wine
  • 3 cups water
  • 1/4 cup rock sugar
  • 1 teaspoon five-spice powder

Instructions

  1. In a pot, blanch the duck feet in boiling water for 5 minutes. Drain and set aside.
  2. Heat some oil in a wok or large pot. Add the ginger, garlic, star anise, dried chili peppers, and cinnamon stick. Stir-fry until fragrant.
  3. Add the blanched duck feet to the wok. Pour in the soy sauce, dark soy sauce, and Shaoxing wine. Stir to coat the duck feet with the sauce.
  4. Pour in the water and add the rock sugar and five-spice powder. Bring to a boil, then reduce the heat to low. Cover and simmer for 2 hours, or until the duck feet are tender.
  5. Once the duck feet are tender, uncover the pot and continue to simmer until the sauce thickens.
  6. Serve the Teochew Style Braised Duck Feet hot, garnished with chopped green onions if desired.
