Ingredients

  • 1 lb duck gizzards, cleaned
  • 2 slices ginger
  • 2 cloves garlic, minced
  • 3 scallions, cut into 2-inch pieces
  • 2 star anise
  • 1 cinnamon stick
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon rock sugar
  • 4 cups water

Instructions

  1. In a pot, blanch the duck gizzards in boiling water for 5 minutes. Drain and set aside.
  2. Heat some oil in the pot, then sauté the ginger, garlic, and scallions until fragrant.
  3. Add the blanched duck gizzards, star anise, and cinnamon stick to the pot. Stir in the soy sauce, dark soy sauce, Shaoxing wine, and rock sugar.
  4. Pour in the water and bring to a boil. Reduce heat, cover, and simmer for 1 hour or until the duck gizzards are tender.
  5. Once done, remove the duck gizzards and reduce the sauce until thickened. Pour the sauce over the duck gizzards before serving.
