Ingredients

  • 4 pig trotters, cleaned and chopped
  • 1 cup soy sauce
  • 1/2 cup rock sugar
  • 4 slices ginger
  • 3 cloves garlic, crushed
  • 2 star anise
  • 1 cinnamon stick
  • 1 teaspoon five-spice powder
  • 1 tablespoon rice wine
  • 4 cups water

Instructions

  1. In a large pot, blanch the pig trotters in boiling water for 5 minutes. Drain and set aside.
  2. In the same pot, add soy sauce, rock sugar, ginger, garlic, star anise, cinnamon stick, five-spice powder, rice wine, and water. Bring to a boil.
  3. Add the blanched pig trotters to the pot. Reduce heat to low, cover, and simmer for 2 hours, or until the pig trotters are tender.
  4. Once the pig trotters are tender, uncover the pot and continue to simmer until the sauce thickens.
  5. Serve the Teochew Style Braised Pig Trotters hot, garnished with green onions if desired.
