Ingredients

  • 1 kg pork cheeks, cleaned and trimmed
  • 4 cloves garlic, minced
  • 2 shallots, finely chopped
  • 3 slices ginger
  • 2 star anise
  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rock sugar
  • 4 cups water
  • Salt, to taste

Instructions

  1. Heat a pot over medium heat and add the pork cheeks. Sear until browned on both sides. Remove and set aside.
  2. In the same pot, add the garlic, shallots, and ginger. Sauté until fragrant.
  3. Return the pork cheeks to the pot. Add the star anise, soy sauce, dark soy sauce, oyster sauce, rock sugar, and water. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 2 hours or until the pork cheeks are tender.
  5. Season with salt to taste. Serve hot.
