潮州焖猪颊肉 (Teochew Style Braised Pork Cheeks) is a classic dish in Chaoshan (Teochew) Cuisine, known for its tender and flavorful pork cheeks braised in a savory sauce.
Ingredients
- 1 kg pork cheeks, cleaned and trimmed
- 4 cloves garlic, minced
- 2 shallots, finely chopped
- 3 slices ginger
- 2 star anise
- 2 tablespoons soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon rock sugar
- 4 cups water
- Salt, to taste
Instructions
- Heat a pot over medium heat and add the pork cheeks. Sear until browned on both sides. Remove and set aside.
- In the same pot, add the garlic, shallots, and ginger. Sauté until fragrant.
- Return the pork cheeks to the pot. Add the star anise, soy sauce, dark soy sauce, oyster sauce, rock sugar, and water. Bring to a boil.
- Reduce heat to low, cover, and simmer for 2 hours or until the pork cheeks are tender.
- Season with salt to taste. Serve hot.
